Manuel Aguilar Brought His Army Values Home—and Opened a Smoothie Shop

For many, a smoothie shop is simply a quick stop between errands. For Manuel Aguilar, it represents something far more meaningful — a space rooted in health, connection, and community impact.

After serving 21 years in the Army, including time stationed in Florida, Aguilar knew that “service” would always be part of his life. The uniform might eventually come off, but the mission-driven mindset would not. While stationed in Florida, he discovered Smoothie King and quickly fell in love with the brand’s commitment to health, fitness, and goal-oriented nutrition.

As retirement approached in June 2025, Aguilar and his family made the decision to return to Colorado, settling first in Boulder before finding their home in Longmont. Close enough to Pueblo for family birthday parties but far enough to carve out their own space, Longmont simply felt right. “We’re here to stay,” he says. His goal is not to just run a business, but to become part of what it means to be a life-changing Longmonster for the next 50 years and beyond.

When Aguilar says it is more than a smoothie shop, he means it. Day to day, customers come in not just for a drink, but for recovery, support, and a sense of direction. For the shop’s one-year anniversary, he created a “Purpose Wall” where guests could write their goals on sticky notes and post them publicly. The question was simple: What is your purpose? The response was overwhelming with so many diverse points of view. In many ways, he says, they are still discovering Longmont’s collective purpose together.

Community is central to everything Aguilar does. The logo itself reflects that commitment, symbolizing people coming together, while also extending their support outwards. Since opening, he has been a Chamber member, and while balancing the roles of owner, manager, and team member leaves little extra time, he values the support network and hopes to engage even more deeply moving forward.

As a veteran, Aguilar is especially passionate about connecting current and former service members within the business community. He envisions mentorship programs, networking groups, and partnerships with recruiters to help young people understand what service truly looks like beyond recruitment posters and event booths. Supporting veteran-owned businesses and creating space for conversation is part of his next chapter of service. “I didn’t stop serving, I just brought it home,” Aguilar said.

One customer moment still stands out. A Chamber representative shared that her daughter was battling cancer. Together, they discussed supplements and nutrition strategies that could help. Hearing about her improvement reinforced why Aguilar opened the doors in the first place.

Six months ago, the shop expanded beyond its smoothie roots. Originally known for its clean, purpose-driven blends, it now offers smoothie bowls, loaded toasts, protein boxes, and more additions on the way. A new oven is arriving soon, opening the door for expanded food offerings over the coming months. Every product is designed intentionally, with high-quality ingredients that align with health goals. “Real food, real people, real purpose” is more than a phrase. It is the standard Aguilar brings to work each day.

For Manuel Aguilar, this is not just about smoothies. It is about showing up with purpose, building community, and continuing to serve, one blend at a time.
